Eden Sea Salt hand harvested French Celtic Eden Sea Salt is a hand-harvested, stone ground, unrefined sea salt from the protected Isle of Noirmoutier in Brittany, France. Utilizing Celtic methods that date back centuries, this sea salt is produced without the use of any chemicals. It boasts a smooth, mellow flavor and contains a wealth of trace minerals. Traditional Production and Quality The Isle of Noirmoutier is renowned for its production of sea salt, with two-thirds of the island being sea marsh. Located in the Bay of Biscay in the Vendee region, the Isle is connected to the continent by the Gois Causeway. The island's sunny, almost tropical climate, combined with constant gentle dry winds that facilitate evaporation, make it an ideal location for sea salt production. The Isle is a national nature preserve and is environmentally protected. Atlantic waters flow into Noirmoutier's rectangular, hard sun-baked man-made clay pools. After two days of evaporation from the sun and wind, large coarse crystals known as 'sel gros' are formed, which are light gray in color due to the clay. These crystals are harvested by the 'saunier' or salt harvester using long rakes to gather them. With strong, swift strokes, the saunier draws the crystals to one side of the pool. Every two days, small amounts of the crystals are collected by the saunier and added to the pile, which continues to grow as the harvest season progresses.
